This is my "chocolate craving" saver
1 cup nonfat milk
1 tablespoon cornstarch
1 tablespoon cocoa
3 tablespoons sugar*
1 teaspoon vanilla extract
Whisk first four ingredients together in a saucepan (you want to make
sure that the cornstarch is dissolved!). Turn heat to medium. Cook
until mixture is hot, stirring the entire time (don't let it boil).
Turn heat to low and cook until pudding thickens. Remove from heat.
Stir in vanilla. Enjoy! Great with half a banana sliced up in it too!
This recipe doesn't get as puddinglike as instant, but even if it totally fails,
it makes a great thick hot chocolate. Also, according to my calculations, it has
not much more than 100 calories for AN ENTIRE CUP. It has never failed to cure
my chocolate cravings.
*I start with 2 tablespoons sugar and add more to taste. I forget how much was
in the recipe to start with, but it was too much. You could always
replace the sugar with splenda too! Unfortunetly it is not availiable
here where I live (Sweden)
And here is my favorite "cake"
Stinas apple cake
For 10 peices:
Dough:
150ml white flour
100ml whole wheat/graham flour
100ml white sugar
2 tsp baking powder
2 tsp vanilla
50 g margarine
100ml lowfat milk
topping:
4 medium apples
2tsp sugar (if needed)
1tsp cinnamon
1. Preheat oven to 174C
2. Mix all dry ingredients, soften margarine in the microwave (soften,
not melt) and mix together with a whisk. Add milk, and vanilla and mix
well (no lumps!)
3. Peel and core the apples, then slice into sections. Put them in a
plastic bag with a bit of sugar and the cinnamon and shake it so that
the spice is evenly distributed.
4. Spray a springform pan with nonstick spray
5. Spread half the dough over the bottom of the pan. Pour the apples on
top, and then dot it with the remaining dough, in tsp size clumps.
6. Bake for 30-35 minutes. Test with a toothpic for done-ness. If it
comes out clean its done!
The bottom of the cake may seem quite sticky, due to the extra juice
from the apples. As there are no eggs in the recipie you dont have to
worry if it seems a bit undercooked
