I would suggest to your friend that she tweak what she is already doing. For example instead of plain pasta, use a multi grain pasta. Whole wheat might be too obvious but a multigrain pasta isn't that noticiable. My husband has the taste buds of a preschooler and he loves multigrain pasta--whole wheat--not so much.
Anyway, I think tweaking will go over alot better and allow time for more gradual changes that will stand the test of time. Adults who need to lose weight can use portion control, whereas kiddo's who are at a healthy weight just need to be transitioned to more healthy choices.
My point is that changes need to be gradual and sustainable. If she is picky and her kids are picky, there will be a revolt in the house if things get too radical too quickly.
Anyway, that's my 2 cents and that has what has brought my dh on board. NO, he doesn't need to lose wt but I cook for the two of us and I do! Win-win for us.
