Default Chicken Tacos

4-6 chicken breasts (boneless, skinless)
1 large jar of salsa (any variety)
2 cans of black beans (rinsed and drained)
2 cans of whole kernel corn (or mexi-corn)...drained

Place the chicken breasts in the crock pot and dump everything on top.
Cook on low for 8-10 hours.

My family likes to shred some of the chicken and put it on a taco shell, then put the "sauce" on top of that (the salsa, corn, black beans mixture). They eat it with cheese, lettuce, and sour cream...and they love it!

But being weight conscious, I usually skip the shell and just put the chicken and fixin's in a bowl with cheese and and a little sour cream on top. SO GOOD!

I made this for my very picky family this evening with a twist.

I cooked the chicken in a skillet, I barely sprayed the pan to keep it from sticking as I seared it then I added water and cooked it thoroughly.
I think removed it from heat and shredded it then put it back in the pan with the salsa I had around the kitchen, a can of black beans drained, a can of corn drained and cooked until everything was heated thoroughly.

I served it with lettuce and tomatoes and onions for my family as well as sour cream and home made guacamole.

I then ate it as a salad with the lettuce on the bottom a few tomatoes and onions and put the chicken on top with 5 tortilla chips crumbled on top to bring the illusion of a taco salad with a dab of guacamole.

Being lactose intolerant I left out the cheese as did the majority of my family, they felt it was so good they didn't need the cheese.

My husband the anti-healthy, anti-vegetable person...loved it said it had great flavor.

This sounds delicious!!! Guess I know what I'm having for dinner tomorrow night!! (If I get to the grocery store in time to buy the ingredients!)

We have this every 2 weeks and eat on it for 2-3 days when we make it. The only difference is we use 1-2 pkgs of corn, 1-2 cans black beans, and we also use 1-2 cans of kidney beans. The amounts vary depending on whats on hand but it always has chicken, salsa, corn, kidney beans and black beans.
DH eats it on a bed of lettuce or like a soft taco. I put mine on a mission tortilla with a lil cheese and brown the cheese in the oven like a mexican pizza type deal.
We love this we just call chicken bean mix lol

This really sounds good! I think this is something I can eat, and something my husband would like too. He isn't dieting and sometimes gets frustrated with my 'healthier' meals. But he loves chicken tacos so this might really be a winner! Think I will try it this weekend. Thanks for sharing!

I was blown away by how delicious this was. Using 10 small tortillas and fat free sour cream, this is about 6 pts per taco. 2 will usually fill you up, especially if you use lettuce.

*note: the sauce may seem very watery in the crockpot. But when you shred the chicken, it absorbs those juices, so do not drain!*
