What's for December Dinner?
This is a tricky month so I thought a new thread would be in order.
My dinner tonight will be roasted cauliflower and sweet potatoes, spinach salad and a chicken breast done in the GF served with mango/lime salsa.

My dinner tonight will be probably 3oz of leftover turkey with 1oz melted cheese, 1 yogurt, salad with italian dressing and mixed fruit cup.

Tonight dinner is out @ a Mexican restaurant. It's new so there is no menu posted. Yikes.
Usually in this situation, I manage to create a kind of taco salad with beans, minus the sour cream and fried tortilla - sometimes I get lucky and find a veggie plate... no chips, no margaritas, no beer. It's all about dodging the mines in the mine field.
Tomorrow, though, is crockpot ratatouille. I am SO excited about that. I'm using red and green peppers so it will be kinda Christmas-y, too...

Lucky me, no cooking tonight, we had company coming for dinner Saturday night and they bailed on account of weather, so I've got tons of leftovers. We'll have pork tenderloin, butternut squash mac and cheese, roasted cauliflower, and roasted butternut squash soup.

I tried a new pasta made from amaranth, quinoa and spelt. Blech. I followed the cooking directions and it cooked up into a gooey mess. The plan was to have it in a veggie broth with chickpeas and spinach. I picked at it because I didn't want to throw it out, but I won't be buying that stuff again.

Last night was a concoction of butternut squash chunks, black beans, peppers, onions, garlic & 1 small can of diced tomatoes. It came out just right
Tonight is dinner out so not sure yet.

Sorry I did not reply to your question Cyndi and Xan - yes, butternut squash mac & cheese. Just use your favorite homemade mac & cheese recipe and add butternut squash puree to the cheese sauce. It was delicious, and even the kids loved it (they did not know there was squash in there ) I added about a cup of puree to the pan of mac, but I was trying to sneak it past the kids, so didn't want the flavor to be too strong. You could put more. I've seen recipes where they chunked it up instead of pureeing, so if you're not trying to fool a child, that's also an option.
DH wanted Greek carryout so I'm having a Greek salad for dinner tonight.

I had planned a shrimp and veggie stir-fry but I'm too tired to fuss. It'll be a Lean Cuisine or President's Choice Chicken Tikki Masala and a salad of carrots, cabbage and cucumber.
