How about various veggies with hummus? You could even take pita chips for other people as well.

Almond stuffed dates? Actually, I bet those aren't low carb.
I also love gherkins rolled in proscuitto but those aren't vegetarian!
Heh toughie.

One of my favorite things in the world (besides hummus) are roasted chickpeas. This is a really good recipe:

Only problem is I consider chickpeas finger food, not sure if others do as well
You could also do grilled veggie kabobs with little skewers.

Oh and I just had an idea but looks like someone beat me to it! Do you eat quinoa? You could make quinoa sushi.
Here is one recipe I found for it:

How about Caprese bites: A small piece of fresh mozzarella, a cherry tomato, and a basil leaf all speared on a toothpick. They look pretty on a platter and taste great.

So easy! Oh yeah, and they are Christmas colors!

Spinach dip (the standard - drained and squeezed frozen spinach, Knorr soup mix, sour cream, mayo, waterchestnuts, green onions), but in a bowl instead of a bread bowl (I use light sour cream and Hellman's canola mayo - which is half the calories of regular). I double the spinach (it's more a spread than a dip consistency).
Awesome with veggie dippers - slices of bell pepper, seedless cucumber, baby carrots, celery, baby bok choy (seperate the leaves), snow or snap pea pods, broccoli, cauliflower.

Baba ganoush--it's like hummus but with roasted eggplant instead of chickpees--you can use veggies to dip instead of pita bread.
