Is it an excellent source of protien, and it is a great replacement for carbs like rice and small pasta. I frequently add it to chili and soups to bulk them up rather than having a side of bread or pasta.
It's also easy to cook (similiar to rice) and gluten free (for those of us sensative to wheat and gluten). Please know that you may have to rinse it beforehand, depending upon the brand you purchase.
