I am wondering if I just want to eat just half of one, should I store the other half raw or cooked?

Cooked...easy to nuke.I usually bake 2 or 3 at a time because they take a while to cook.Saves time.

I would personally store it cooked and wrapped in the fridge. They tend to go brown once cut and may spoil faster if uncooked and cut

I've done it both ways depending on how I'm fixing it. I will often make extra to save for lunch or dinner the next day, but I am supposed to eat on a rotation diet which means I can't have it the next day for dinner so will cut in half, rub with lemon (to prevent browning), or just wrap up and refrigerate to eat later in the week. Both ways seem to work just fine, it just depends on whether I want to fix it another way later on.

Cooked. It'll keep fine for quite a few days.

My problem would be stopping at the 1/2. I LOVE sweet potatoes.

Thanks Robin. I actually haven't had a sweet tater in..years but I am gonna have some tonight. I am thinking about doing the fries thing but I just have Pam and no oil..will that work?

That should work just fine. Spray em' up well. I like to make them spicy. I add chili powder, cumin, garlic powder, onion powder, paprika, a little sea salt and a tad of cayenne pepper.

I did mine at 425 degrees...I cooked for 15 minutes, flipped em then cooked for another 15 minutes.
