Yum I adore egg salad. I like to add a little chopped celery and onion too. *drooling* It is literally one of my favorite foods. (And yep it's definitely SB friendly.) Serve a scoop on a large lettuce leaf, or wrap up in a lettuce leaf like a sandwich, or during Phase 2 spread on a slice of whole wheat bread and wrap up for a halfsandwich.
OMG, I want egg salad so bad right now.
