Pumpkin
I LOVE pumpkin baked goods - pumpkin loaf, muffins, you name it. Does anyone have any great low-fat/calorie pumpkin recipes you'd like to share?

Mmmm..Love pumpkin pancakes...yep, loaded with carbs but you could use whole wheat flour to make them more doable.

In the current issue of Prevention there's an individual pumpkin pie recipe with the crust made from graham crackers, wheat germ and ground flax. I lent my copy to a friend but it might be worth tracking down. They were individual pies made in muffin tins.

Last fall and winter, I stirred pumpkin, real maple syrup, and cinnamon into yogurt cheese. About a half cup of that topped with 1/4 cup of granola makes a nice autumn breakfast.
