Default How to make the most of it...

Today I made veggie stock with some random veggies and veggie bits.

When I was done, I decided to make use of those veggies. I put them in the chopper, and put the bits in a bowl, I added wheat gluten, nutritional yeast, breadcrumbs, soy sauce and some seasonings to taste....oh and black beans! I pressed them into 'burgers' and cooked a big batch to freeze. They are actually quite tasty. The seitan holds them together and it's a good way to sneak in some veggies.

I got about 16 burgers out of 2 and a quarter cups of wheat gluten. and a bunch of veggies and bread crumbs.

If you've made stock out of the veggies, there's not much nutrition (or flavor) left in them.

Oh well, I didn't want to eat just seitan....and I assume that eating it is better than throwing it out.
