What's for Dinner? 3/6-3/13
This is always such a great thread and we always seem to lose track of it.
Tonight is tuna/white bean salad in ww pita pockets and this middle eastern bean salad from Kalyn's Kitchen.
I'm going to be doing more baking today (for a friend's birthday) so I will try to avoid the temptation of coconut cookies with a passion fruit curd filling.

I made that salad last weekend It's good though I think I need to tweak it a little.
I'm making the broccoli cheese soup with the white bean base, roasted baby bok choy, and veggie burgers

Cyndi - what do you think it needs? I'm always open to suggestions. I'll probably tweak the dressing a bit.

toasted ezikial bread with herbed olive oil, caesar salad and caprese salad. light supper tonight... oh and beany brownies with cool whip for dessert.

I thought about grilling but am crockpotting instead. Once it's warm out the crockpot will go back into storage so might as well enjoy it while it's cool out. I'm mkaing the Tuscan White Bean Stew, http://www.3fatchicks.com/forum/showthread.php?t=162313 with roasted cauliflower on the side.
Twynn - It's just a little bland so next time I will zip it up. I'm sure it needs more garlic also a little more lemon juice.

We're going to a friend's for dinner...more than likely it will be something highly processed out of a box...we always eat before we go so we don't have to eat much there.

I got a great deal on some pork tenderloins yesterday, so I'll make a couple of those tonight - haven't decided on the preparation yet. I've got tons of Brussels sprouts left to go along, probably some spinach, and there's rice for the kids.

Last night was mexican with ww burritos and fresh guacamole, tonight will be stuffed portobella mushrooms, although I am not sure yet what I will stuff them with- any ideas?

The family wants spaghetti and meatballs today, but I'm having spaghetti squash with meatless meatballs for myself. And for dessert - fresh strawberry shortcake! I'm setting aside some strawberries for myself that I'll sweeten with Splenda, and use FF Cool Whip, but I'm indulging in a small piece of SF, FF angel food cake. (And I know, it's not OP. )

Cyndi - I agree that it is a little bland. I added some red onion, red wine vinegar and more garlic and it was better.
Cottage - fresh shortcake sounds ultra yummy.
Tonight is thai chicken wraps. I'll probably eat them in lettuce cups because I had oatmeal for breakfast.
