Default Low Carb Stew

The following is the way I make it in a crock pot, but if you have a different way, then by all means just use the substituted ingredients listed here instead of the usual carby stuff.

Ingredients:
1 cup beef broth (0g)
2 lbs. lean beef steak, trimmed and cubed for stew (0g)
1 stalk celery, trimmed, washed and cut into 1/2" sections (0.8g)
2 cups cauliflower, stalk trimmed, washed and cut into florets (5.2g)
- this is in exchange for 2 cups potato (56.8g)
1/2 cup yellow onion, washed and chopped (5.5g)
1/2 cup carrots, washed, peeled and chopped (5.6g)
1 clove garlic, minced (0.9g)
Salt to taste
Pepper to taste

Total net carbs for entire dish: 18 grams

Turn crock pot on high. Add broth, garlic, salt and pepper to crock pot. Place lid on crock pot. Wait for broth to heat to high (about 20 minutes). Add beef and onion to crock pot and cook on high for 1 hour. Add celery and carrots and continue to cook on high for 1 hour. Add cauliflower and turn to Low, allow to cook for 2 more hours. Serve.

*DO NOT ADD CAULIFLOWER AT THE BEGINNING OR IT WILL DISINTEGRATE INTO MUSH*

Feeds about 8-12.

This sounds good. Cubed turnips make a good potato substitute, also.

And I like to add some chopped cabbage to my stew too.

This sounds awesome! I might make this during the Induction stage, only maybe use less or no cauliflower? I like cauliflower in my salad, to which I think I will use it there instead of the stew. Looking forward to trying this.

This sounds utterly delicious for a cold winter day in OHIO! The only thing I'm going to do is omit the corn because it has too many carbs for me. Otherwise this is a very good Low Carb stew. Thank you very much!

Corn??? There was no corn in that recipe.

LOL! When I read it I thought it said corn too, but it says yellow onion, not yellow corn.
