Default Lentil and Smoked Sausage Soup

I decided I'd try lentils again since being on South beach, I hated them as a child. I found this recipes on allrecipes.com. Oh....my....gosh. I love it!! Good for all phases, awesome taste, very filling. Good for you too!

The original recipe is vegetarian, which I am not. Below are my notes/changes.


INGREDIENTS
2 tablespoons olive oil
7 ounces dry lentils
1 small onion, chopped
3/4 cup finely shredded green cabbage
1 clove garlic, crushed
2 vegetarian smoked sausages, diced
1 (16 ounce) can diced tomatoes
2 cubes vegetable bouillon
4 cups water
1 bay leaf
1 teaspoon thyme leaves
1/2 teaspoon cayenne pepper
salt and pepper to taste


DIRECTIONS
Heat oil in a large saucepan over medium heat. Stir in lentils, onion, cabbage, and garlic; cook until tender. Stir in sausage and tomatoes. Crumble vegetable cubes over mixture and pour in water. Stir in bay leaf, thyme, and cayenne pepper. Bring to a boil; cover, and simmer until lentils are tender, about 30 minutes. Season with salt and pepper to taste.


MY CHANGES:
***many recommended to skip the bouillon, and just use 4 cups chicken broth. I did this, it was great.
***I used turkey smoked sausage instead.
***I don't like it spicy, so I used a dash of chipolte cayenne pepper instead.
***many cooks in the comments section also used a crock pot; that'll be great in the winter!


Nutritional Information (based on water instead of broth; broth adds 10 calories and a ton of salt!!)

This recipe sounds really good, Twynne! I'm looking forward to making it very soon, now that we're in soup weather. Thanks for sharing!

Perfect timing! I have lentils and smoked veggie sausage on hand and will make some of this for my stash.

this looks fabulous! I think I will put this on today- I was going to make taco bake but I think I just changed my mind! Maybe I will prepare both of them and use them all week! yum!

What's a good brand of smoked Turkey sausage? Could I use sweet italian or Turkey Kielbasa?
