cool whip
ok...so i know i can have the cool whip free stuff. ya know, the one without many cals, no sugar, no fat etc.? anyways, i know i could just eat it as it is but i thought there was some way to mix jello with it and make a tasty treat!! i've looked for recipes but cant find anything consistent. also, i know i could do it with jello but could i do it with jellp sugar free pudding? any other cool whip ideas? thanks!!

My favorite cool whip treat:
Get 2 low fat graham crackers
Spread a layer of cool whip between the crackers
Put in the freezer for 1 hour
Yum.

mmmm, I love this recipe I stole from the biggest loser cookbook.... cool whip between two gram crackers and frozen! It's like a low cal, lower sugar ice cream sandwich

Heh, it is that good! Double plus good with the vanilla cool whip they make for the holidays If I'm really treating, I've been known to add a few minature chocolate chips! Strawberries are also good and healthy

i guess i didnt mention....im looking for low sugar and low carb, im diabetic so it needs to be something i can eat.
thanks for the suggestion, that sounds good...really good with chocolate graham crackers!! please tell me someone has tried that?

Make the jello using 1.5 cups of water and let it set until it's just starting to gel. Add about 1 cup of Cool Whip and fold in. You can add well drained fruit (don't use fresh pineapple or kiwi-stops the jello from setting) at this time also. Return to refrigerator until set.

sweet...perfect. so is that for the big jello packets or the little? can i use either, just decrease the water or is it the same?
any help on the pudding front?
i bet people think im dumb now...i have to ask how to cook jello and pudding

Alton Brown did a whole episode on whipped cream and jello. I'm sure hisrecipes could be adapted to sugar free jello and cool whip.
Just hit foodnetwork.com and look up alton brown and jello. Seriously - I remember some pretty yummy looking stuff. And I'm not even a big jello fan.

One of my favorite things to do with jello is let the jello set and then use a blender or a hand mixer to whip it. You just keep whipping air into it until the jello becomes opaque and creamy looking (with almost a foamy texture), and eat it right away or let it reset. The foam is a little lighter if you eat right away than if you let it reset. I love the texture, it just melts immediately in your mouth into nothing.
For a cheesecake dessert, I stir in ricotta, cottage cheese, or cream cheese into jello before letting it set. If using cream cheese, you've got to add the cream cheese before you add the cold water, and stir until it melts into the jello before adding the cold water. I use about a half to 3/4 cup of cheese for the small package of jello. And then just let it set like for regular jello.
This is good this way, but is even better if you whip with the blender or mixer like I described doing with plain jello. If you're going to whip it, you can either put the cheese in before the jello sets, or you can just add the set jello and the cheese into the blender or bowl before whipping.

Here's another jello recipe. BTW, I personally hate jello. It's a whole textural thing; just makes me gag!
Anyway, take 3 egg whites and beat them on high in a mixer. As they start to stiffen up, add 1/4 to 1/2 cup sugar and one (small) packet of jello (strawberry is good). Add 1 tspn. vanilla and continue to beat until stiff peaks form.
Place by the tablespoonful onto a greased (I use non-stick spray) cookie sheet and bake at 325 for 5 minutes. Then, turn off the oven and leave them alone for a few hours. Lovely strawberry meringues. Very tasty. I'm thinking you could sub splenda or a different sugar substitute for the sugar and I'm sure sugar-free jello would work just fine.
As for the cool whip -- I never could figure out if it was a dessert topping or a floor wax.

I make a thing I call Jello Hash! You make three flavors of Jello. Let them set. Cut the jellos into small chunks, mix in with the cool whip and let all of it meld together into a pretty medley. I make this with whipped cream, which is okay on Atkins and I use sugar free jello, but I don't see why cool whip would not work.

If you're diabetic and looking for low-sugar/low-carb, I'd recommend just making your own whipped cream. Yep! A couple tablespoons won't put you over the edge and it's far better than cool-whip. (Your mileage may vary.)
When I was on Atkins I'd make my own out of heavy whipping cream and a few packets of equal. Just takes minutes with a good blender. Yum.
