If I feel up to it, I'm making shrimp tacos (corn tortillas, green tomato salsa, seasoned shrimp, and cabbage). If I'm not feeling up to it (I hit my head over the weekend and have a swollen black eye--it takes more energy out of you then you'd think), lunch will be a sandwich of turkey, guacamole, hummus, cucumber, and micro greens on whole wheat.
Salad. Romaine lettuce topped with a perfectly ripe sliced peach, a bit of homegrown chopped onion and some home grown sprouts, dressed with homemade yogurt cheese. Very refreshing.
Romaine lettuce with a half-cup of cooked leftover veggies (oven roasted onions/green peppers) and 3 oz tuna pouch, with basalmic glaze as dressing. And a 45 calorie sugar free vanilla pudding cup.
