Mock Tuna Salad (Chickpeas)
For the record, I love real tuna salad and it is completely legal on SB if made without sugar (not Grandma's way). But I found this recipe in the Vegetarian section of the forum and it is so good I thought it bore repeating here. No, it doesn't taste exactly like tuna salad, but it IS amazing how tuna salad-ey it does taste. If you are looking for a vegetarian option, or another way to get beans in your diet, give this a try.

Mock Tuna Salad
* 1 15-oz can garbanzo beans
* 1 stalk celery, finely chopped
* 1 green onion, finely chopped
* 2 tsp. mayonnaise or mustard
* 1 tbsp of lemon juice or vinegar
* 1 tbsp sweet pickle relish (made with Splenda) or dill relish
* 1/4 tsp. salt (optional)
* sprinkle garlic powder (optional)
Mash the garbanzo beans with a fork or potato masher.
Leave some chunks.
Add the sliced celery, chopped onion, mayonnaise, lemon juice or vinegar, and relish.
Add salt and garlic powder to taste.
A hot/appetizer option: "I mixed/crushed them with little chunks of tomato, pickles, and red onion and added mustard and a tsp of olive oil. I baked it for about 10 minutes just to have it warm and it was fantastic!!! We had them with crackers and veggies."
Some options I want to try when I make it again:
Curry powder
Fish sauce to add a "fishy" taste
I just ate half of it so I would say makes two servings.
