Watch for sales to get the lean meat as cheap as possible. If you have to buy ground beef that isn't as lean as it should, use it for dishes where you can brown it and then rinse the meat. If I am using it for something where I can't (like meatloaf), I use a very lean meat.
I also buy in the large value packs sometimes. For instance I spent $10 on pork chops that I used for the Vietnamese pork rolls from the Quick and Easy cookbook but I repackaged the remaining 7 pork chops into freezer bags so I have 3 more meals. I will use one for the pork fajitas from the cookbook later this week.
I try those methods rather than cheaper cuts most of the time. In my case, I lack time more than money but if I had more time, I would buy chicken that has bones and skin and would debone it and remove the skin myself. You could even buy a whole chicken as long as the dark meat goes to your BF.
