Question Butternut Squash

Hi everyone!

I found a recipe calling for butternut squash, so I searched our forum to see if it is allowed. I understand that because it is a winter squash, it's not allowed until Phase 2. What constitutes a serving of butternut squash? Also, this may be a dumb question, but is it considered a vegetable?

Yes, like cucumbers, it's considered a veggie although it's really a fruit. I'd say one cup of cubes cooked would be a serving. That's 80 calories per Fitday.
Most winter squashes come in around the same calorie and fiber count.

On the Phase 2 allowed foods list in the FAQ it says that winter squash counts as a grain/starch.

Thanks for the help! I made a recipe for butternut squash "fries" that I found on hungrygirl.com--not too bad!
