I'm sure we all love tomatoes.....especially this time of the year. Besides throwing them on a salad or sandwich, how do you eat your tomatoes???
And they can be fresh or canned
Straight out of the garden they don't need much. Just a little salt and pepper, and I am good to go.
I like to hollow them out and stuff them with tuna, chicken, shrimp, or crab salad. BLTs too!
Grape tomatoes I love to saute in a little olive oil and whatever spices and cook just until the skins start to split.
I have a recipe for stuffed veggies with ham and cheese, that's really good.
Fresh salsa.
Nope! I can't stand them plain, on sandwiches, in salads, etc. I like creamy tomato soup, tomato-based pasta sauces, and a little salsa here and there, but I can't stand plain tomatoes
Oh, and ketchup...I like that, too. Does that count?
MMMMM! i love tomatoes. Grape tomatoes and lf cottage cheese is one of my favorite breakfasts in the summer. I don't really have any good recipes for them, i usually just eat them fresh. I am looking forward to some recipes here though.
I love tomatoes in sauces, tomatoes in salads, I always had to have tomatoes on sandwiches and burgers, chopped tomatoes on tacos, salsa on tacos, and I love veggie pizzas with tomato chunks.
Unfortunately I can't eat sandwiches and burgers and tacos right now.
I love to make a good tomato sauce for italian dishes using a can of crushed tomatoes with no additives.
Oh, and I've learned to like v-8 juice! I used to find it disgusting, but now I really enjoy the flavor. Yes, I like it cold in a glass! Yum. And it's a great soup base.
I use a lot of canned tomatoes. They are great with sauteed veggies, especially squash. Sautee minced garlic and diced onions in a pan, add diced squash and a can of diced tomatoes. Season a variety of ways, I've gone italian with an italian mix, mexican with chile powder seasoning or indian with garam masala. Stir and sautee until squash is soft.
I haven't done it in a while but I also make a cooked bean medly of sorts with 2-3 cans of various beans (rinsed well), diced tomatoes, tomato sauce and whatever seasoning I'm feeling. Like above, mexican, indian or italian for the most part.
Canned or fresh tomatoes area also great for bean salads. Mix in a can of black beans(rinsed), kidney beans(rinsed), a can of tomatoes (drained), diced onions and cucumber. Top with some lemon juice and either red wine vinegar or balsamic vinegar.
With regular tomatoes, I throw them in salads or just eat them by themselves.

I have never thought to use canned tomatoes with squash. That sounds great. Thanks for posting that because I fully intend on trying that, probably the italian kind (and like hook it up with some chopped onion and garlic). That would be really good as a side dish or even as a topping for grilled chicken breast or a steak.
I wouldn't be Italian if I didn't like tomatoes. I love them best, sun-warmed fresh from the garden with a little sea salt and pepper. I like to roast cherry tomatoes with a drizzle of olive oil and chopped garlic, sooooo good! A favorite canned tomato recipe I use often is to saute chickpeas in olive oil and chopped onions til browned, then add a can of diced tomatoes and crushed garlic. Heat through and serve with locatelli or parmesan shavings.
The only way I don't like them is cold, and I won't go near tomato juice.

In the north, people put mayo on them...it isn't too bad, but not great. I prefer them fresh with a little pepper....salt with tomatoes aggravates my stomach - acidity?
I also like to roast them and use them in sauces and such.
I like canned, but only in the winter. In the summer, I can make my own purees.
