Wedding Anniversary Dinner on Phase 1?! HELP!
No only that, we are both pescotarians (no other meat but fish).
What could be a nice wedding anniversary dinner for tomorrow?
I thought baked salmon with dill and lemon, and a green salad tossed with almonds?
Do you have any exciting ideas? Help, I just started ... today!!!

That sounds good but I would also add one or two more vegetables. Perhaps broccoli steamed lightly in the microwave or brussel sprouts. Garlic mustard green beans would also work. There are so many possibilities.

Why not serve the salmon on mashed cauliflower - seasoned like mashed potatoes. And have some nice steamed broccoli, sauteed with some garlic then a little spritz of butter spray.

You could start with a nice soup course - roasted red pepper or a bisque.
Then Lobster? Or a lobster tail or fish filet stuffed with crab imperial. Scallops, shrimp scampi, oh I could go on...
For veggies, asparagus, green beans amandine, spinach souffle
You could even do a sugar free dessert - what about a chocolate mousse with Cool Whip Free? Oops sorry about the strawberries, I forgot, Ph1.

yeah I'd either do the Salmon or some shrimp and scallops.. MMM.. Yummy!! These ideas sound very good!! You could try some squid. the asparagus is a good idea too!! ENJOY your anniversary!!

If you want a special dessert, you might try this:
Warm Chocolate Cakes with Coffee Creme Anglaise
(makes 4 at 139 calories each--based on using white sugar--this would be less with splenda substituted)
Sauce:
1/3 cup skim milk
4 tsp sugar***(substitute splenda)
1-1 inch piece of vanilla bean (may use 1 tsp vanilla extract)
4 tsp brewed coffee
1 egg yolk (save the white for making the cakes)
Bring first 4 ingredients to a simmer in a medium pan over medium heat, stirring continuously, remove vanilla bean, scrape seeds into sauce. Place egg yolk in bowl & mix in 2 Tbsp of hot milk mixture. Mix well & add back to pan. Cook 1 minute. Stir. Remove from heat, cool, cover & refrigerate.
Cakes:
1 egg separated (plus the egg white from the first egg used for the sauce)
2 Tbsp sugar***(substitute splenda)
1/4 cup chopped bittersweet chocolate chips (to keep this phase 1, you should substitute either baker's chocolate with no sugar or cocoa powder, then add a bit of splenda)
8 tsp of nonfat plain yogurt
Beat egg whites in a bowl with electric mixer til foamy. Add 1/2 tsp sugar, continue beating on high, add (5) more 1/2 tsp increments of sugar until stiff peaks form. In another bowl, beat egg yolk with remaining 1 tbl suar until think. Melt choclate in double boiler or microwave. Remove from heat; stir in yogurt; add to egg yolk mixture. Fold in egg white mixture. Cover; refrigerate at least an hour. Heat oven to 325. Coat 4 molds in muffin tin with cooking spray; pour in batter. bake 12 min or until cake springs back when touched. Cool slightly.
Pour 2 tbl sauce on each of 4 plates; put 1 cake on top of each.
This comes out as a very rich fancy dessert, great for company and perfect b/c it only makes 4.
On phase 2, I added raspberries for the look and taste.

And it is perfect.. it makes 4 little cakes... mmm... I just got this binder from Target for recipes, I'm going to fill it with SB friendly recipes.. I'm also going to go through my recipes now and make them SB friendly or throw them out..
I want to only have healthier choices!!
The cakes will be one of them LOL

i did a nice phase one dessert the other night - stewed rhubarb set in raspberry jelly with a vanilla ricotta cream on the side... you can do it in little moulds and individual serves
