Default Oh crockpot, how I love you

Um, yeah. I'm such a dork. But it's true, I love my crockpot so much right now. You see, I somehow forgot that I had filled and put it on this morning. When I got home, my house smelled fabulous and dinner was done. Oh, yummy soup.

I'm feeling very silly right now. (Obviously.) But it was such a nice surprise. And I know some people are wondering how I possibly could have forgotten. The thing is, I did all my prep work last night. The veggies were cut up and in ziplock bags, the chicken was prepped, and the non-fridge ingredients were out on the counter, as was the crockpot. So this morning, I just threw everything in - it took about five minutes. Which is to say that it's not that weird that I forgot.

And also? Very yummy chicken soup.

Carol, I'm happy to share, but it was nothing terribly exciting. I tend to make up crockpot recipes as I go, frequently depending on what's in the fridge.

For today's soup, I cut up some celery, some mushrooms, two white potatoes, and an onion, and peeled a head of garlic. I put the potatoes on the bottom of the crockpot (if they go on top, they don't cook enough), added boneless, skinless chicken breasts, and threw all the other veggies in on top. I ground a bunch of black pepper on top, because I love pepper and I think it gives soups a little kick. Then I poured in a container of Imagine low-sodium chicken broth (the 32 oz, I think), put the crockpot on low, and went to work

By the time it's done, the chicken is so tender that it easily breaks up into chicken-soup appropriate sizes. Usually I do that in the bowl. What I made today should be about four meals.

I love my crockpot -- mostly because I never know what time we are going to eat.

Here's one I made recently from the WW website that was good to me --

Boneless, skinless chicken breast
1 package taco seasoning
1 cup salsa

Cook for about 7 to 8 hours -- good (served it over rice for my husband)

I love my crock pot too and I need to start using it more especially with summer coming and I dont want to heat up the house with the oven...and it will be nice to be able to take an extra long walk with my son with out having to worry to be home at a certain time to take the food out of the oven!

I do the Crock Pot tacos, very much like your recipe Shelby.

Skinless, boneless chicken breasts
1 jar salsa
1 can refried beans

Cook 6-7 hours - shred the chicken.
