Would Panko work? I've never crushed cereal to use as a coating.

How did they taste?

Doesn't the Fiber One make the coating slightly sweet? Hmmm, I like Fiber
One but I don't know if I would like it as a breading!

Fiber One actually as a cereal I personally think tastes like cardboard it is very bland.... but great as a breading... I love the hungry-girl website and they use this for all their breading I'm having it tomorrow and I can't wait!

Really? When I tried Fiber One all I could taste was the fake sweetener. It has aspartame and I can really taste it.

I hated the taste of fibre one! I also think it tastes like cardboard. Mine did not have aspartame though...actually now that i think about it I bought a noname version of it maybe that is why. Anyways I may try it for breading.

Fiber One is FANTASTIC as a breading. Hungry Girl gives frequent recipes using it as a breading instead of bread crumbs. Here's an example.

http://www.hungry-girl.com/chew/chew....php?isid=1309

Healthier than bread crumbs plus you get a nice dose of fiber.

Thanks for the recipe, jillnicole
