Your plan sounds good! I only structure myself so closely because I'm just starting out, and if I don't structure, and tally my cal intake at the end of the day, I would probably cry! With a detailed plan, I create my control, if that makes sense
It also makes me more organized in my daily life because I don't have to worry about the food part, something that has consumed me for so long. It's like a weight off my shoulders (and hips!).
