I agree with everything size8 said, especially drinking water and keeping a food journal. I would also stress that when you say you are going to eat junk food once a week, that you're not bingeing or going crazy. Check nutritional info before you go to town, even on junk food.
It takes a deficit of 3500 calories to lose 1 lb. If you do well for six days, eating right and exercising, and then eat thousands of calories in junk food on day seven, you will negate all of your hard work. You might consider having a little something sweet (or salty, or whatever your vise happens to be) every day and PLANNING it into your calorie/food allotment so that you don't overdo it. There are healthier alternatives to junk food that are still very tasty. Good luck!
