Default Craving Alternative

Okay ladies, I am seriously craving loaded queso from On the Border. It doesn't help that I have a friend staying over this weekend who also is craving it (and won't stop talking about it). I am having a hard time stopping myself from ordering it for us to take out. Is there a healthy alternative for this gooey yummy Mexican goodness???

I'm not sure exactly what is in a loaded queso or how bad it is, but could you eat half and load up on veg to still get you full? Save the other half for lunch tomorrow maybe? Just a thought!

I do a dip that I bring to parties and stuff that is made mostly with 99% fat free beef denison's chili. To make a small batch I would mix one can of that with 1/2-3/4 cup of reduced fat cheese (they carry 2% milkfat "quesadilla" blend in my grocery stores that is perfect!), a dash of hot sauce (I like tobasco brand chipotle sauce), and nuke it in the microwave in a bowl for about 4-5 min total (or until when you stir the cheese and chili mix evenly), and garnish with chopped green onions and half a diced avocado. It is LOADED with protein and good fats, and it isn't too bad when compared to a loaded queso dip. I love it and it is great with baked pita chips, or if you feel crazy, whole grain tortilla chips . Enjoy.
