Some spaghetti concoction. Whole grain rotini, no sodium added tomato sauce, italian seasonings, and onion and garlic lightly sauteed in just enough olive oil to not stick to the pan. Mixed it all up and let it simmer til the pasta kind of absorbed the sauce, sprinkled on some low fat parmesan, and voila.
It was fine plain but ground turkey would have added to it.
I'm still stuck in a hotel room so I had another healthy choice frozen dinner. I'm kind of wanting subway right now. I don't really think Subways any better sodium wise though.
Tonight we had garlic beef stir fried with onions and broccoli, and sweet potato fries. (I got the idea for that from the sweet potato thread in the veggie challenged forum.) SO GOOD!!
I've never liked vegetables (DH LOVES them) but someone on here said it takes up to 100 tries of eating something before you get used to it, so I've been making some sort of vegetable every night for dinner.
I had a frozen Dr. Oetker Ristorante pizza lol Had half (about 400 cals) and I added some extra veggies on top. Gave the other half to my roommates so I wouldnt eat the pizza today hah
Unfortunately because I'm on Spring break right now - a vegetarian/partial vegan stuck in a house of omnivores who almost exclusively eat JUNK and - making do with healthy frozen meals is pretty much my only option for the next ~1.5 weeks! I'm doing my best to pick the low-cal ones and try to make modifications to them, but I'm terrified of all the sodium! Anyways, last night I had an Amy's Kitchen teriyaki bowl (tofu, brown rice, veggies and the teriyaki sauce) and added in some extra steamed veggies... Yum! I also had an apple a little bit later for an evening snack/"dessert."
I did BAD!!!!! I ordered the chicken tender app at work which comes with fries. I had ranch and mild sauce on the side. Not a low cal thing in there.....BUT I loudly let everyone know I had them. Servers are vultures. If there is food around they will eat it. So I actually only ate one of the chickens and a few fries. So it could have been worse.
I had a seriously hearty ceasar salad: romaine lettuce, bacon bits, roasted chicken chunks in a mixed-up dressing of caesar salad, spicy mustard, and a pinch of mayo.
I had a turkey, rice, sausage and cheese casserole. Sounds horribly fattening, but it is mostly brown rice and turkey breast, so not too bad. It is also good with broccoli mixed in.
Tonight - Mexican Beef and Bean Bake - Cooked, mashed pinto beans, layered sort of lasagna style with zucchini sliced like thick noodles, a mixture of browned onion, garlic, jalapeno, and 4% fat ground beef, and a mixture of sauteed bell and pasilla pepper. You layer it, bake it, cut into wedges, and top off with a dollop of lowfat sour cream. It's a definite family favorite. The best part is that a serving is actually quite HUGE and really filling.
