Default Crock Pot Meals Are So Easy

Here is one of my favorites from Debster's cookbook. Let's start planning our weeks' meals.

Crock-pot Pork Tenderloin with Apples

Ingredients:

1 1/2 - 2 lbs. lean pork tenderloin
2 large Granny Smith apples, chopped
1/2 cup unsweetened apple sauce
1 bunch green onion with 3" greens, thin sliced
2 tablespoon brown sugar
2 tablespoon balsamic or cider vinegar

Preparation:

Trim excess fat from the pork and slice in 1 1/2-inch pieces.
Place pork slices in the crock-pot with the remaining ingredients, mixing to combine.
Cover and cook on low for 7 to 9 hours.

Makes: 4 servings

Serving size: ¼ recipe

LA Exchange: 1 Protein, 1 fruit, 1 Vegetable

Deb's note:
I've got this in the crock pot right now and it smells wonderful, I also just had a taste and it is yummy!! I was going to try this with turkey loin instead but couldn't find any that weren't marinated. Definitely a keeper.

Lynn's note - I have added sauerkraut - 15 oz can would add 1 Vegetable

Sounds delicious! I've gotten mixed messages on whether or not it's okay to have pork. What are your thoughts on this? (We've MISSED pork - it's our favorite!!!)

Pork is listed under the Consume Infrequently category. I knew this question would come up when I chose this recipe, but you can't just eat chicken and turkey all the time. I honestly don't have it often, but I do plan for it and have it.

Lynn- I have made this a couple of time too and it's really yummy. The kraut addition is a good idea. I made the white chicken chili tonight and have the shrimp scampi with Linguine planned for tomorrow night.

Suzanne- You can have lean pork. They used to say only once a week. It takes a long time to digest is the reason why. We eat pork probably twice a month and beef or venison 2-3 times a week. We have a freezer full of venison, which doesn't fall into the consume infrequently category, so we eat that more often than the beef.

Ooooo.. I want some venison! I'd love to make some low-sodium jerky with it...

We do pork every so often.. Liz made a crock pot roast pork last week and I make stuffed pork chops tonight, using a spinach/sun dried tomato/garlic/reduced fat ricotta cheese mixture... Talk about YUMMO!

Dan- We made some awesome deer sausage that I thought would be good as jerky, used the jerky gun and the dehydrator. OOOHH YEAH!! The recipe was one DH's family has been using for years. We cut way back on the tenderquick and the salt. So good and so healthy.

Sounds really good.. If you need an outside tester for quality control, let me know!

I make some really spicy stuff and use NoSalt and Morton's Lite instead of the real stuff..

I love crock pots meals too. In fact, I just made a big beef stew and put in the crock pot for lunch. It is big enough that I am hoping that I can warm it up again for dinner.

Here is one of my favorites:

Lean pork roast or tenderloin
12 0z bag dry black beans
1 small can green chilis
1 jar medium salsa

Place pork and black beans into crock pot. Cover with water, cook 8 hours on high. About an hour before serving, stir in chilis and salsa. Pork should be tender enough to break up nicely with a spoon. Serve with low fat shredded cheese and FF sour cream. My kids will eat bowl after bowl after bowl of this. It is so good!

I have no idea how to count this, any thoughts?
