Default Nicole's New Breakfast

I was inspired to start this thread when I read from Nicole herself that her customary breakfast protein is one hard boiled egg and she said it was "nasty." So welcome back Nicole. Here is a recipe for you Nicole and anyone else that wants a change from their usual breakfast protein. Note: It makes 2 servings and can be made ahead of time. It is good warm or cold.

Baked Custard

Servings 2 each 1/2 Protein

2 eggs
1/2 cup skim milk
1TB sugar or sugar substitute
2 tsp vanilla
1/4 tsp low sodium salt
2 TB orange or lemon zest (optional)
Nutmeg and cinnamon for garnish

Break eggs into small mixing bowl and beat slightly. Add milk, sugar or substitute, vanilla, zest and salt and beat well. Pour into 4oz damp custard cups and sprinkle with cinnamon and nutmeg. Bake in 350% oven in a shallow pan of water for 20-30 minutes. When custard is set, a knife inserted in the center will come out clean.

Sounds great Lynn!

I'm all about 1/2 serving of reduced fat PB mixed in with my chocolate lite shake. I make it in my bella cucina...YUM!

what if I don't own custard cups? could this be done in the microwave somehow?

Yes, there is milk just 1/4 cup skim milk.
Thanks for catching another mistake with this recipe.
I did not count milk since it is a small amount. If you feel the need, you can reduce the size of a serving of one of your dairys for the day.
