Default favorite EASY POP recipe

I just tried an idea I read about last week and it will definitely be on my favorites list!
I peeled and diced an eggplant and then sauteed it in Pam. Then I diced up a piece of light laughing cow cheese over that. I put 1/2 cup of spinach and feta ravioli on top of that, and then topped it all with a little marinara. YUMMY!
Any other easy, quick, and yummy favorites out there?

One of the easiest and best tasting is the creamy chicken caserole from the LA cookbook... It uses the chicken soup lites, rice and chicken, and that's about it...

How much is that cookbook? I have wondered, but have been scared to ask. I can't really spend any more on this that what I've already invested. I've prepaid for a ton of bars and juice. I my dh knew what I had spent he would CROAK!!!

I paid around $40 for mine at the COD and it has really been worth the investment!

I paid $40 in Canada and honestly I use at least 5 recipes a week.. I find favorites and then keep making them. from smoothies to salad to main dishes and a great apple crisp. I have two little girls under 4 and they eat almost all of the dishes which makes it so much easier to only cook one meal

I don't think I paid $40 for it.. I thought it was closer to $25... We don't use it near as often as we should.. But there are some really good ones in there.. Especially if you like desserts and clam chowdah!

The cookbook is absolutely worth it. I joined LAWL the first time (pre-baby) and bought the first cookbook...then I bought the newer one last year. Sometimes you can find them on e-bay as well.

I have a cookbook called "Eat Shrink and Be Merry" It has some great recipes in it. One of my favourites is Salmon marinated in a little bit of lime juice, mixed with some soy sauce, and bbq sauce. Another is roasted vegetables, which is pretty much just an assortment of veggies, like tomatoes, zucchini, mushrooms, - whatever you want, and olive oil, and balsamic vinegar. It also calls for bread crumbs and parmesan chees, but I often leave that out - still very good. There is another recipe for Steamed green beans tossed with lemon, honey mustard and bacon. It is a real favourite. There is only two slices of bacon in the whole recipe - makes 6 servings. 62 cals per serving.

I discovered a super-easy crockpot dish:

Drop 4 chicken breasts (they can even be frozen) into your crockpot, top with a packet of taco seasoning (or make your own so there's no sodium for Dan to come beat you over, heh) and a cup (or so, I just dumped a bunch in without measuring it) of salsa. Cover, cook on low all day (I put mine in around 7am and didn't eat dinner till 6pm and it was fine). The chicken will fall apart into shreds and you can put it in tortillas, over chips, over salad, etc. Makes a GREAT chicken filling/topper that everyone will enjoy, no matter if they're on LAWL or not.

While I went to weigh in this morning I went ahead and got the cookbook.
I can't wait to get the time to browse through it! You guys convinced me it was worth it.
Keep those faves coming in! I LOVE to see things that people are actually enjoying.
