Default Two pies instead of one

Thanks for all the delicious recipes that I have tried and enjoyed. I made the Breakfast Cheesecake this morning and found that it filled two 9 1/2 " pie pans instead of the one specified. I double checked the recipe and my quantities were correct. I baked them as per the recipe, cut into one and sampled it. It was slightly soft in the middle and I am hoping that it will firm up in the refrigerator. Now that I have scored two for one, can I increase the portion size? Will this extra pie freeze?

Hi Michgal! SCRUMMY.. them pies !!!! yes, you can freeze the other one... and usually they taste even better the day after you make them... Regarding portions.... calories in and calories out darlin...regardless of the "diet" you are on it comes down to that mostly....
