Thumbs up Cottage Cheese Oatmeal Pancakes!

I just tried this recipe and it was delsih! Had a crepe-like texture. It's really healthy with all of the good for ya ingredients.
1/2 Cup Oatmeal
1/2 Cup Cottage Cheese
1 Teaspoon Vanilla
4 Egg Whites or use whole eggs depending on your diet plan
1 Teaspoon of Splenda (optional)

Blend in blender until smooth like traditional pancake batter. Use cooking spray to coat the skillet not oil! Cook like regular pancakes.

I ate 'em without butter or syrup and they had plenty of flavor to stand alone.

Default Twist on Oatmeal Cottage Cheese Pancakes

A favorite of mine:

Pumpkin Pancakes

1/3 cup dry oatmeal (regular, not quick-cooking)
2 packets Splenda
1/2 tsp pumpkin pie spice
2 Tblsp. canned pumpkin
1 Tblsp. fat free cottage cheese
1/2 cup egg whites

Blend in blender. Grill on hot griddle sprayed with no-stick spray.

3 WW points. Very filling.

I think I originally obtained this recipe from hungry-girl.

Both those recipes sound wonderful. I'm cooking-challenged but I think even I could cook one of those! Thanks.

Yum! I'm going to try the first recipe for breakfast tomorrow morning, and have it with a rhubarb sauce I made.

I'm so glad you enjoyed it! My husband wrinkled his nose up at the recipe but I know he'll like 'em once he has them!
