Default What's for Dinner Tonight?

Everyone have a plan for dinner? We are having-

Meatloaf with Vegetables from the SBD Cookbook
Steamed Broccoli
AuGratin Potatoes (for the girly girls, I will not partake!)

Tonight has to be a fast meal so we are having:

ham
cranberry sauce (I'm out of mine made with Splenda so I'm skipping)
sweet potato (with Sugar Twin Brown Sugar and Smart Balance)
deviled eggs
one extra veggie (possibly green beans or wax beans)

I am still VERY green on the beach....day 2....and my family eats 'normal'

so, I will be having a hamburger patty with lettuce tomato and cheese

Do you have a specific recipe you use for your deviled eggs? Those sound so good to me!

This is the one that I use. I don't know if it's been posted here.

Simple Deviled Eggs
From http://www.cyber-kitchen.com. Double or triple ingredients as needed for more servings.

2 hard boiled eggs
1 teaspoon mayonnaise
1/4 teaspoon prepared mustard
Salt to taste
Dash pepper

Cut eggs in half lengthwise. Remove yolks and mash them in a bowl with a fork. Add remaining ingredients to the yolks. When well mixed, stuff a spoonful in each of the egg white halves. Garnish with paprika. If you like more of a zing, use spicy brown mustard.

Default dinner

I'm planning to make the Shrimp Scampi from the SDB Quicka nd Easy cookbook. It sounds good- just not sure if I want it over salad greens or ww pasta. Prob have brocoli on the side.

I've tried the deviled eggs mentioned here and really like them- quick and easy! May have to do those tomorrow!

I have 2 main Options
I fi Don't go to PT we'll have Salmon with Garlic EVO and Fresh basil and couscous tossed with grape tomatoes onions ( or chives) and sauteed spinach and fresh basil
If I do Onion Cheeseburgers with the couscous and a veggie

My we can eat well on this plan.
I don't need to cook tonight as I am having cold lobster, wonderful garden green salad and fresh raspberries. Life is good!

AHHHHHHHHHHHHHHH!!! I'm hitting the bread tonight,going to have

2sls 4 cheese pizza with

a lg pepper & tomato salad with a lite vinegarette.

I'm going to Ruthxxx's house for lobster

I'm cheating somewhat with some whole wheat pasta cooked carbonara style - I am using turkey bacon rather than panchetta (sorry dh).

Most likely have salad on the side.

When I was pregnant with my dd, we went to Cape Cod on vacation and I had lobster almost every night. She cannot stand them - calls them the "big red bug".

I just had zucchini and spaghetti squash sauteed in olive oil with sauce and some of the ricotta mixture leftover from the capri chicken I made the other night. It was delicious.

I'm in my first week on, so I need help with recipes to keep me from getting bored.
Tonight I had a salad with romaine, red peppers, red onion, and radishes. Wow is that wierd, or what? I put on a can of tuna in oil (drained) and a squeeze of lemon. Dessert is Chocolate Ricotta Cheese. I bought the SB cookbook today from Amazon, so that should help. I don't want to make this an Atkins(ish) 2 weeks. Man! It's hard to find something to eat when you are used to grabbing some kind of carb!

I made Taco Bake and served it on top of salad mix with some sour cream and green onions on top of it. Even my son ate it wonderful. He said he liked it a lot better on top of the salad.

Bringing this thread back to the top because I am excited--tonight we're having lemon-mustard dump chicken, probably baked, with whatever is left in the freezer in terms of veggies! We're moving Thursday and so the cupboards are bare!!!!

I'm on phase 2. We're having Eggplant parmesan (eggplant dipped in Eggbeaters and whole wheat bread crumbs, covered with a no sugar added spaghetti sauce and baked with a little mozzarella on top). I'll serve it with whole wheat penne pasta and a couple of veggies or one veggie and a salad. It tastes as good as the version that is fried but is much healthier.
