Default Wave 1 or 2 - Shrimp Portifino

This is my take on a great dish I love... just modified to Sonoma Style

10 Small tail on shrimp
2-3 Cups of Spinach (as you know, it cooks down a lot)
3 Mushrooms, sliced
1 Clove garlic (finely chopped)
1/2 Serrano or Pablano pepper (finely chopped)
2T. Lemon juice
2-3 T. Olive Oil
Kosher Salt (Optional)
Pine nuts (Optional)
1 Serving WG angle hair pasta

In a pan, saute Shrimp, garlic and pepper in olive oil (about 3 mins each side)

Remove shrimp from pan, sprinkle coarse salt to taste. In same pan, add lemon juice, toss in spinach, mushrooms and pine nuts. It's done when spinach looks good to you.

While you are doing this, you can cook WG pasta according to directions on box.

To assemble, put spinach mixture on plate. Add nest of angle hair pasta, top off with shrimp.
