Hi Chiquita’s,

Yesterday I posed my creation for Mock Waffles. Today, here are Mock Pancakes.

Mock Pancakes

2 eggs separated. Beat the whites until light and fluffy. I beat them in my Cuisinart with a wire whisk until fluffy.

In a mini food processor beat:
1/4 c. cottage cheese
2 egg yokes
1/2 tsp baking powder
1/2 tsp vanilla
1/2 tsp cinnamon
Few grates of lemon rind
1 t. fresh lemon juice
1 pkg "blue sugar"

Fold the mixture into the whites.

Put in hot skillet and make individual pancakes.
One serving. I gave the finished ones a few squirts of I Can't Believe it's Not Butter Spray and some SF syrup. (Tried some of the batter in the waffle iron, wasn’t pleased with the result.)

Syn, I made the mock pancakes... tasty! I added some ground flaxseed for added fiber and Omega 3 benefits.. I think they would make a great basis for crepe! Stuffed with splenda sweetened whipped creamcheese, a tich of ricotta .. hmmm, I'm not much of a cook...but just thinkin there's a dessert in this somewhere!!!

I just had these this morning and will definitely make them again. They are creamy in the middle which was fine with me. I really liked that they rose like real pancakes and flipped like real pancakes.

Oh YUMMY!

I only switched up a few things, I used ricotta instead of cottage cheese (only because it was too early to break out the food processor to get the lumps out), I omitted the lemon peel and used bottled lemon juice (only a dribble), and I used splenda.

So so so so good. I used Schatzi's idea with cream cheese too Sweetened up some cream cheese with splenda and vanilla for a "frosting" and spread them over the pancakes.. and TEEEEEERIFFIC!

Great change for a Sunday morning breakfast! And for people like me, almost like having desert for breakfast will get me everytime!

I too used ricotta this morning, but didn't have the same results. I think I will stick to the cottage cheese.

This was so good, my husband and I loved it-a real treat after 7 days of eggs! The only problem was we were still hungry afterwards.....maybe if I make it with the frosting it would be more filling? Also, I used splenda instead of equal and no lemon juice.
