I've got a big, thick beautiful cod fillet sitting in my fridge, all ready for me to devour tomorrow for lunch. But I was wanting to ask all of you here if you have any quick and easy (and yummy) ways you prepare your fish. Most of the recipes I have are for several servings and since I'm the only one that eats fish around my house, I need a serving size of one.
Yummy! I LOVE cod. I don't know if it would be convenient for you, but I love to cook it on an outdoor grill (preferably charcoal but gas is good too) and serve it with a nice chunky corn or mango salsa (not taco bell style salsa, lol).
I often make fish in foil; my husband loathes the smell of fish and this prevents that problem.
Spray a large square of foil with nonstick cooking spray.
Put the fillet in it.
Top with a lemon or orange slice, salt and pepper, optional sprig of rosemary.
Grill or bake.
Open the foil really carefully--it's hot. The juices give it an extra flavor boost and you can eat it right out of the foil (over a plate, that is!)
I do a similar thing to Elanjel but use baking paper (dunno what you guys call it!!! - silicon paper???) I chop up celery, zucchini, leeks, mushrooms, whatever veggies I have to hand, sprinkle on fresh or dried herbs, and then pop the cod on top, wrap up, and bake about 15 minutes.
I also do it with cooked veggie, like ratatouille, or sometimes just simply with lemon and pepper.
I love my fish. In fact we had salmon cooked like that yesterday.
I usually eat my fish by mixing lemon juice and teriaki sauce and pouring over. Or Annie's Ginger dressing and teriaki. Very good stuff.
I've been playing with the idea of a new "recipe" though for fish. Take 1 fish fillet, put in an oven safe pan that has been sprayed with butter flavors spray lightly. Salt and pepper fish. Take 1 slice low calorie white bread (around 45 calories each) or 1/2 of a low calorie hamburger bun (I usually have these on hand, so that's what I would use.). Chop a small clove of garlic. Drop bread into a running blender to turn into crumbs, then add chopped garlic and let whirl in blender for a few seconds to combine. Put garlic crumbs on fish (should be a fairly good layer), then spray the top with butter spray. Bake in 350 oven for around 10 minutes, or until done. Serve with lemon.
I recently went to an Epicure Selections spice party. Like Tupperware or Pampered Chef but with spices. Fairly reasonable for good stuff. They had loads of mixed spice blends and suggestions and recipes. A low cal way to dress up fish. You could do it with foil or on the grill or ...
I found something yummy to do with my fish - I put it in a baking dish and drizzle it with a little bit of Hawaiian marinade, then sprinkle it with Old Bay seasoning.
