Aha! I did a more refined web search and found it on one of the cooking demo companies' websites! As you will see from the recipe, it is actually an 8-vegetable salad (I think they used 9 at my demo, but whatever, it looks the same!).
Here's the recipe from the Cook For Life website:
INGREDIENTS:
1 Carrot, cone #4
1 Zucchini, cone #5
1 Yellow Squash, cone #5
1 Cucumber, cone #5
1 Large Celery stalk, cone #2
1/4 Wedge Red & Green Cabbage (with core), cone #2
1/4 Wedge White Onion (with core), cone #2
1-2” slice Butternut Squash, cone #1
(The cone #s refer to the cones that go with the Kitchen/King Kutter device that they use the salad to demo.)
DIRECTIONS:
1. Place a salad bowl under the Kitchen Kutter and cut all vegetables using the cones indicated in recipe.
2. Mix all ingredients, add dressing of your choice and serve.
Nutritional Analysis per Serving: 36 calories, 0 g. fat, 0 mg. cholesterol, 78 mg. sodium, 9 g. carbohydrates, 5 g. protein
At the demos, they toss this with either extra virgin olive oil or Italian dressing. It's very yummy!
