Default Ranch Chicken Breasts

I'm making this for my lunch today and thought I'd share it with the rest of you. It's great for a quick lunch or use as many chicken breasts as you wish to make it a family meal.

1 boneless/skinless chicken breast
1 tablespoon light (or whichever kind you use) ranch dressing
Chopped fresh or canned mushrooms
Diced pimento or roasted red pepper
2 slices turkey bacon

Cook bacon slices until cooked but not too crisp. Flatten chicken breast and spread with the ranch dressing. Top with the bacon slices, mushrooms and pimento. Roll up chicken breast and secure with toothpicks.

Pop it in the oven at 350 for 30-40 minutes. All done!

I think this would also be good tossing on a few fresh baby spinach leaves.
