"Eggnog MUST be served at all holiday functions. Isn't that the law of the land? Well here's my version--prepared without eggs, sugar, fat, or liquor, it still tastes exactly like traditional eggnog."
1. In a large pitcher, combine skim milk, dry pudding mix, rum extract, and nutmeg. Mix well using a long spoon. Refrigerate 5 minutes. Gently stir again. Serve at once. Makes 4 (1 cup) servings.
HINT: If you like thinner eggnog, add 1 cup of cold water when adding skim milk.

3/4 cup Better'n'Eggs or Egg Beaters
1 dash salt
1/2 cup sugar
2 teaspoons vanilla extract
3/4 cup Cool Whip Free
nutmeg -- for garnish
1. Heat milk in a large sauce pan until hot. Do not boil.
2. Remove from heat.
3. Beat together Better'n'Eggs and salt in a heatproof bowl using a wire whisk. Gradually add the sugar.
4. Slowly stir in the hot milk, beating constantly.
5. Return mixture to the saucepan. Cook and stir with the wire whisk over medium-low heat for 12-17 minutes or until mixture thinly coats a metal spoon. Do not boil.
6. Remove from heat and stir in the vanilla.
7. Set saucepan in a bowl of ice cubes for 5 minutes, stirring occasionally.
8. Chill until serving time.
9. Pour into mugs and top with 1 tablespoon of Cool Whip Free and sprinkle with nutmeg.
Vegetable Dill Dip
1 c. lite mayonnaise
1 c. lite sour cream
2 tsp. garlic powder
1-2 tsp. ea. celery salt and garlic salt
2 T. dried dillweed
2 T. parsley
2 T. dried onion flakes
Mix all and let set several hours or overnight.
Just a note that you may want to adjust the seasonings more, or less, to your own taste

Lowfat Eggnog 12 servings Each 1-cup serving = 2 points.
This recipe make a lot so I scaled it down for our smaller crowd! It was a big hit! Yummy!
11 cups cold skim milk
2 teaspoons vanilla extract
2 packages (1.5 ounces each) instant sugar-free vanilla pudding
Artificial sweetener equivalent to 1/3 cup sugar
1/2 teaspoon ground nutmeg
In large bowl, combine milk and vanilla. In another bowl, combine dry pudding mix, sweetener and nutmeg. Whisk into milk mixture until smooth. Refrigerate until serving.
Makes 12 servings. Each 1-cup serving has 105 calories, 0 fat, 0 fiber...2 points.
Heat milk, evaporated milk, eggs, and sugar over medium heat about 10 minutes,
until slightly thickened. Do not boil. Stir over a bowl of ice water 2 minutes.
Stir in vanilla; cover and chill 4-24 hours. Add more skim milk if needed to achieve
desired consistency. Top with ground nutmeg just before serving.
Yield: 22 servings - 1/2 cup each

DIRECTIONS:
In large saucepan, beat together eggs, sugar and salt (if desired); stir in 1/2 of the milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160 degrees F (70 degrees C). Remove pan from heat.
Stir remaining milk and vanilla extract into the mixture. Cover and refrigerate until thoroughly chilled; several hours or overnight.
