Question converting to low cal/fat need help!!

Ok I found this recipe for pumpkin ice cream and I want to try it but I want to convert it to a healthier lower fat lower cal recipe and I'm definetly not the kitchen person. Can someone help me?

Here's the ingredients:
2 cups whipping cream
1 cup milk
3/4 cup sugar
1 cup pumpkin ( I use freshly cooked and pureed )
1 teaspoon fresh ground nutmeg
1 teaspoon ground cinnamon

I know I can replace the milk with like 1%, maybe even rice milk? How about Stevia instead of sugar? And what would you change the whipping cream to?

It might be difficult to convert the recipe entirely, since the nature of ice cream relies on butterfat for texture. If you go to far, it will be too icey, less creamy. I would suggest replacing the whipping cream with half and half. I've made ice cream with Splenda before and it turned out well. Though my recipe was not low in fat, because I created it for someone that was on Atkins.
