Saurkraut and noodles. (one of our STAPLE crockpot meals is pork and kraut, which is pork loin cut into pieces, and stewed with kraut, carrots, a shredded apple, and onion soup mix for hours, then served over noodles)

Garlic broccoli and a salad.

Spiced apples (sliced apples sauteed in a little bit of butter and some apple juice concentrate (from frozen) and cinnamon) and whole wheat rolls.

Spinachy tomatoes (can of diced tomatoes, heated with frozen spinach and some onion and whatever herbs you like) and crudites (baby carrots, radishes, snow peas, broccoli)

synger you made me hungry! I'm going to have to make those apples!

I was also going to suggest applesauce and a vegetable. Or mashed yams (baked or boiled yam mashed with a little butter, orange juice, and a little brown sugar). Anything kind of sweet tastes really good with pork.
I also really like to chop mine up and mix it with brown rice, reduced sodium teriyaki sauce, and snap peas. Just fry the pork with cooking spray then add the peas until they're cooked. Finally mix in precooked rice and the sauce. Mix it up until it's all hot. Yummy.

I love PEARS with pork--cinnamon-spiced pear slices the same way as synger's apple slices. I almost always throw in a big green salad with any meal just because it helps fill things in
