Spring Salads
 
sorry if this should be posted else where . . .

I just had the most obscenely delicious salad for lunch that i threw together from the bits and pieces of things in the fridge and cupboard that weren't enough on their own for a meal.
Salad mix, spinach, few dried cranberries, sunflower seeds, a boiled egg and a fantastic parmesan oil + vinger dressing.
Best salad i've ever made, which got me to thinking, what are some really good salad's you guys have made/tried?

Its spring, that means fresh veg and fruit so its Salada season for me :)

There really isn't a salad I don't like.

I also LOVE a Crab Louie salad with homemade Russian dressing (you only need a smidge when it's homemade) served with butter lettuce.

Add a little feta to that salad, and WOW - amazing!
One salad I've been eating lately that I'm in love with is alfalfa sprouts, tomato, grilled chicken, and avacado - topped with a bit of my peppercorn/garlic grinder (McCormick) and some salt and it is delicious! And sprouts are so healthy for you!
When I started eating healthier, on ething I missed from our local pizza sho was Buffalo Chicken Salad - so I made my own. I just cut up raw chicken breast, cook it in some hot sauce in a pan, and throw it on top of a salad with a sprinkle of feta. Add a little bit of reduced fat ranch, and it's not too shabby! Don't necessarily need the chicken to be fried, afterall. :) Enjoy

I'm crazy about cold quinoa, adding in greek fixins, cukes, grape tomatoes, tons of red onion, black olives, a tiny bit of feta and then a good dressing, it's even better after a day in the fridge!

I tried McDonald's Grilled Chicken TUSCAN salad, with dried cranberries and sunflower seeds - it was really good! it says it's 340 cals with the dressing included but it tasted a bit yummy for that!!

AND i found 50% coupons online @ mcdonalds.ca, so the salad was only $3.50, and their drinks are all $1 woohooo

I LOVE these...
1) greens with madarins, green onions, mushrooms, celery and lightly candied almonds.
2) taco salad with ground turkey, avocado, tomato, kidney beans, toasted tortilla pieces, fat free sour cream
3) greens with goat cheese, apple, almonds/pecans, balsamic, chicken
4) greens with feta, watermelon, green onion, yellow pepper, mint (weird but tasty)
5) greens with beets, goat cheese, pistachios, orange/apple, balsamic

I got coupons in the mail, totally where I stole the cranberrie and sunflower seed idea from ha ha!

Baby spinach, half a pear (sliced or diced), goat cheese, and toasted walnuts with a vinaigrette. Sooo good!

I stole the idea from a basil parmessan dressing i picked up at the grocery store once.
I just used olive oil ( i had extra virgin)
some red wine vinegar, little papper and some shaved parm . . .shook it all up and tasted good.
I liked the one i bought, but when I can try making it at home i usually do.

I love my salad I have EVERY NIGHT:

Spring mix with herbs, tomatoes, cucumber, heart of palm, crushed cashews, flax seed and crasins(I make a huge container and use 1/4 cup on each salad) and .5-1 T of olive oil.
