Default Mini Pumpkins

What are yummy ways to cook these? I am not looking for anything that will have any sorta sweetness to it :|

I make stuffed pumpkin with them. The stuffing I use is a mix of whatever ground meat you prefer (I am planning to do them for Halloween dinner with half beef half turkey), rice (I use brown), onions, parsley, sage, rosemary, thyme, garlic, and a touch of saffron. I cook the onions with a bit of cooking spray until they are tender then add the meat and seasonings and brown it. I then mix it with cooked brown rice. I cut the tops off of the little pumpkins as if I were making jack-o-lanterns and clean out the seeds and stuff. Then fill them with the stuffing, set the tops back on lightly, put them on a baking sheet, and bake them at about 400 for about an hour. It is sooooo good. You can also add more veggies to the stuffing, change the seasonings, sometimes I add diced apples, cranberries, or chopped nuts.

I know this is a stupid question but can you eat the uhh..shell of the pumpkin ( I have never ate em except in pie, heh )

I have no idea if it is safe to do so or not - I do know that you won't want to, I have accidentally gotta bit before and it was gross.

I don't know a lot about cooking pumpkins (at least healthy options, I know plenty for cookies, bread, muffins, pie) but there was a discussion with some ideas on the Whole Food section that might help some.

With the shell, I would assume it's like other winter squashes where you can bake it in the shell, but not actually eat the shell. Again though, I have never made one so I'm really not sure.
