It's a soup day!
Today we're having chicken/veggie/rice soup... with homemade turkey stock
So today's soup has (it was clean out the fridge day)
celery
zucchini
carrots
mushrooms
red peppers
onion
garlic
radishes
brown rice
chicken.
it smells SOOOOOO FREAKING GOOD and at only 96 calories per cup! It's so much awesomeness!
What is your favorite soup? Recipe please?

Sounds good!! I love an italian sausage soup -- err I did lol I don't know the calories in it though but if I substuted turkey sausage it might work. It has italian veggies, can of diced tomatoes -- I can't remember it all right now though.

Today's lunch is a butternut squash soup with chickpeas.
I did make a big batch of lentil soup yesterday (onions, garlic, carrots, celery, large can of crushed tomatoes, some veggie broth and 2 cups of uncooked lentils). It is really good.

Quickie Asian Soup for lunch:
Vegetable broth
cubed extra firm tofu
scallions and garlic sauteed in PAM.
shrimp.
Mushrooms.
Little bit of soy sauce.
YUM.

chicken soup:
chicken breast boiled and broth skimmed.
1 can of cream of mushroom soups( healthy version)
1 can of cream of celery( healthy version)
1/2 bag of no yoke egg noodles
mix with the broth to the consitency you want..i like it thin..my kids like it thick.
I tend to eat less of the noodles and more broth.
I have added celery, mushroom, and carrots to it.

Just tried this the other day and it is so quick and easy and relatively low cal
Tomato/Tortilla Soup
whirl in a food processer: 1 onion (chopped), 2 cloves garlic (chopped), 1 can whole tomatoes
then put it on the stove and cook it for about 10-15 minutes to get the onion bits tender
add about 6-8 cups of chicken broth, some spice (I used ground chili), and some herbs (I used basil but you could use cilantro)
Simmer for as much time as you have and waaa laaaaa!
I added a little shredded cheddar for garnish which was tasty. Depending upon how many calories you were willing to add, you could add all kinds of garnishes (sour cream, tortilla strips) but to me, it was nice and satisfying just on its own.

I am making Taco Soup tonight:
Brown 1 lb of extra lean (96% lean) beef or ground turkey with one chopped onion.
Add:
1 can pinto beans, rinsed
1 can kidney beans, rinsed
1 can chili beans & sauce
8oz can of Rotel Mexican tomatoes
8oz can of diced tomatoes
1 c water
1 oz taco seasoning (1 packet)
1 oz Ranch seasoning (1 packet)
Simmer 1 hour.
Sometimes I add a can of corn, drained. Or a couple of zucchinis, cubed small.
The kids top it with light sour cream, corn chips and grated cheese.
