I cook sweet potatoes in the microwave. Just push the "potato" button. I also cook squash in the microwave. Spray with spray butter and enjoy. As you can tell, I'm not a cook! ha. As I've confessed before, I'm a volume eater so I would never have the problem of having half left over. I'm working on this.

Sweet potatoes are one of my new favorites. I keep several at all times because they store so well and I can fix them fast. I normally eat a whole one but when I am making it to take to work for lunch, I cook it in the microwave and then scoop the flesh out. I store this in a sandwich baggie and it works fine.

Why did I ignore sweet potatoes for so many years??? I missed so many good foods by choosing the stuff that I chose.

Onderchick & Robin - do your sweet potato fries actually get crispy? Mine are always floppy and squishy.

to make mine crispy when they are just about cooked, i up the oven to hi broiler and crisp them up.

Mine were crispy. I cut them up like fries and left the skin on then sprayed em with pam and sprinkled on sea salt and black pepper. Cooked at 425 for 15 minutes, flipped them then cooked another 15 minutes.
