Default Im continuing to make changes

I just bought some Buffalo meat and some other lowfat sensible foods...the buffalo meat is really lowfat..and high protein...yummy too. I havent checked in because of busy times at work but Im hangin in there....

I LOVE buffalo. One of my favorite meals is buffalo burgers made with onion and black beans, served on a bed of lettuce, topped with tomato and caramelized onions. A vendor at the farm market I go to on a regular basis has a buffalo farm. They sell all cuts of buffalo (I can only find ground in stores)...ground, roast, steaks, etc. It's free range, all natural, humanely raised and not a bad price. I guess she sells half/whole buffalo, but I don't have the freezer or money to purchase it that way, but I've looked into it and it would be a fabulous deal compared to buying individual cuts.

For anyone else interested in trying buffalo, just make sure you cook it lower than you would most other meats. Because it is so low in fat, you can over cook it much faster making it very dry.

where the buffalo roam.... i can't get that out of my head I've never tried it but I would if they had it around here...

We have a "buffalo" store here opposite the library. I've been meaning to check it out. We assume it's really expensive though. You can't buy it in the grocery stores here at all. (Probably because it is local!)
