It's 11pm here, but I got out of bed to make my lunch for tomorrow! I KNOW that i won't do it if I leave it for the morning and I'll ending buying something. So yay for me for making it tonight! And while I was cooking, I mapped out the rest of my meals for tomorrow. For lunch I made: 8oz Shirataki Tofu Noodles, 5 1/2 oz grilled chicken, tossed together with 2 tbspn of olive oil, 2 cloves of minced fresh garlic, and red pepper flakes. I also packed 2 tbspn of parmesan cheese to mix into it tomorrow after I re-heat it. Hopefully it's good! It's a good recipe with regular pasta, but I've never made it with the shirataki noodles before.

Today I am having big salad with devilled eggs on the side.

TraceyElaine - your steak with salad really sounded good.

DC Chick - how were those noodles? They are really hard to find up here - only tracked them down in 1 store & haven't picked them up yet. Are they worth the effort?

Today I had smokes turkey and lite Swiss cheese open face on a big piece of hardy rye bread (with mustard). On the side I had cherry tomatoes with lite blue cheese dressing as a dip.

I made a spinach and cheese stuffed chicken breast and a spinch salad.

We eat our big meal at noon.

They are pretty good! you really have to cook them in something very flavorful though. If not, theyve got a weird smell/taste to them. they are worth it though for 80 calories for 8oz of 'pasta'!!!

This week's lunch is Isralei Couscous (aka big couscous), cucumbers, tomatoes, feta and Romano basil salad dressing. I've been bringing a whole wheat mini pita with it this week.
1 box of isralei couscous, 2 cucumbers, 4 tomatoes, 5 servings of dressing and 5 servings of feta cheese. Combine all together in large bowl and then I separate into even portions into 5 re-usable Tupperware containers. For added protein it goes well with tuna or grilled chicken...both cold. Nice and easy and tasty for the summer!

mmmm this sounds so yummy!! thanks for including the recipe!!

Today I had homemade veggie chili (tomatoes, zucchini, red pepper, onion, corn, with lots of spices) over brown rice.

Today for lunch I had a Double Double with Cheese and Onions "Protein Style" from In 'N Out Burgers when I finished my assignment today. Boy was it Yum-O!!! As I was driving from one spot to another, I stopped at home and grabbed more water and a SF Jell-O.

I have been wanting a philly cheesesteak sandwich and chips for awhile now (weeks) so today for lunch I am going to try to fulfill that desire with a Lean Pockets Philly Steak & Cheese (270 calories) and baked Cheetos (130 calories). That is a junkier meal than I usually have but I do that every now and then. I will have carrots and an apple with it to give it some nutritional value.
