Default Want another yummy recipe?

The ingredients are what they are because they're what I had in!

1 Tbsp olive oil
10oz raw onion
4.5 oz zucchini cubed
8 oz potato cubed

Fry all the above.

Add 1 can chopped tomatoes
1 can drained garbanzo beans
1.25 tsp ground cumin
1.25 tsp ground ginger
.75 tsp ground coriander
.25 tsp ground cinnamon
1 tsp sugar
.5 tsp salt
.25 tsp ground black pepper
1 oz pecan nut bits
1 cup home made chicken stock

Simmer until soft. The potatoes took a surprisingly long time but it was worth the wait!

Makes 4 good helpings, and is great with couscous.

Fat 11.4
Fibre 10.4
Protein 11.5
(just the stew, not the couscous)

Can I chime in also? I recently started making smoothies, and OMG, they are heavenly!!!! Believe me, even my husband likes them!

1 cup Light Soy Milk
3 heaping tbsp Soy Protein Powder
1 cup frozen strawberries
3 or 4 Splenda packets

Blend together, and yummmmmmmmmy!!!

You know what I'd add? Tomatoes!! I made curried tomatoes/chickpeas the other day and it was sooo good.

this is my new thing of late - i've been craving popsicles, but just freezing juice isn't the right consistency so i tried this (i don't usually like Chemical Light but it'll do in a pinch LOL)


one package (makes 2 quarts) Crystal Light drink mix, flavor of choice
one 0.3 oz package Jell-O Sugar Free gelatin dessert (jello), flavor of choice
2 C boiling water
1-1/2 C cold water

In large mixing bowl, whisk together Crystal Light and Jello crystals.

Add boiling water and stir until crystals have dissolved.

Add cold water. Mix well.

Pour into popsicle trays and freeze.

my fav combo so far is orange/strawberry/banana crystal light & strawberry jello !

My fix for potato chips:

Waffle cut carrot slices
Olive Oil in spritz bottle
non-sodium popcorn topper

Cook them at 400 for 30 minutes. MMMMMMMmmm!

Thanks for the recipes. I love cinnamon and never would have thought of putting it on zucchini or potatoes. I'll have to try it.

Allidh - Funny, I missed the tomatoes. Cinnamon is a common spice in indian cooking and the spice recipe you listed is basically garam masala. I'd omit the sugar though.
