Default Favorite Recipies

1 Pan Fruit Cobbler

Makes 8 servings – 3 points each.

4 C. fresh fruit (no melons) (my personal fave is strawberries)
½ c. Splenda
2 T cornstarch dissolved in ¼ c of the milk
1 ½ c. low fat milk
2 c. flour
1 c. unsweetened applesauce
I can’t Believe its not Butter Light
1 tsp cinnamon
1 tsp vanilla
½ tsp salt

Butter the bottom of a 13 x 9 “ pan and preheat oven to 350° F.
Mix everything in the baking pan (to consistency of thick pancake mix) and put in the oven. Bake for 45 minutes, let cool. Cut into 8 squares.

I have no idea the calories, but I'm guessing its about 150 per serving.

Cola Chicken

4 servings, If you use 99% fat free chicken breasts this is 3 pts a serving
If you use regular chicken breasts its 4 pts a serving

4 skinless boneless chicken breasts (if the breasts are thick, cut into pieces to cook evenly)
1 cup ketchup
12 oz can diet cola (coke, pepsi, whatever)
1 Tbsp Minced onion OR 1 cup chopped onion

Put chicken in a non-stick skillet or sauce pan, pour ketchup and diet cola and onion over the top. Bring to boil. Cover and reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken.

Again I think this is 150-200 calories per serving.

Crazy Pizza

Makes 6 servings, 4.5 points each serving

8 oz lean beef or turkey (90%)
1/2 cup sliced mushrooms (one 2.5 oz jar), drained
1/2 cup chopped green bell pepper(optional, I don't use, my husband doesn't like peppers!)
1/2 cup chopped onion
1/3 cup sliced ripe olives (optional)
1 3/4 Hunt's Tomato sauce - 15 oz can
1 tbsp sugar Twin or Sprinkle Sweet (optional)
1 tsp Italian seasoning
1 can Pillsbury refrigerated buttermilk biscuits - 7.5 oz can
1/3 cup reduced-fat cheddar cheese, shredded
1/3 cup reduced-fat mozzarella cheese, shredded


Preheat oven to 350 degrees F. Spray an 8x8 inch baking dish with olive-flavored cooking spray.
In a large skillet sprayed with olive-flavored cooking spray, brown meat. Add mushrooms, green pepper, onion and olives. Mix well to combine.
Stir in tomato sauce, Sugar Twin, and Italian seasoning. Remove skillet from heat.Separate biscuits and cut each biscuit into 4 pieces. Gently stir biscuit pieces into meat mixture.
Pour mixture into prepared baking dish. Bake 20 minutes. Sprinkle shredded Cheddar and mozzarella cheese evenly over the top. continue baking until cheese melts, about 10 minutes. Place baking dish on a wire rack and let set 5 minutes. Cut into 6 servings. This dish freezes well.

about 225 cal per serving

this is my own recipe, as posted on vegweb

Bumblebee Chili

Ingredients:

1 lb bag black beans, rinsed, soaked and cooked, or canned equivalent
1 lb bag frozen yellow sweet corn
2 cans Hunts special recipe diced seasoned tomatoes for chili
1 large yellow onion, coarsely chopped
optional
2 tablespoons olive oil
corn chips, crushed
finely chopped green onion
tofutti better than sour cream
Directions:
Combine first 4 ingredients in a stock pot, with one tomato can full of water, poured through both cans, to get out all the lingering traces of sauce. Add the optional olive oil, if desired, and simmer, covered for 25-30 minutes.

Serve garnished with corn chips, tofutti sour cream, and green onion, or just plain is good too. I served this at my daughters birthday party, with all of our meateater relatives, and they all loved it, and Grandma left with the recipe :-) I made it without the oil and sour cream, just chips and onions, and it was soooo very good :-)

Not mine, but nummy

Mediterranean Scramble (*Very* Yummy)

Ingredients:

1 package (14 oz.) firm tofu
4 oz. sliced mushrooms (I use half of a pre-sliced 8 oz. package)
1 small can (2.25 oz.) sliced black olives, drained
2 Tablespoons chopped sun-dried tomatoes in olive oil
1/2 teaspoon turmeric
1/2 teaspoon salt

Directions:
Put the sun-dried tomatoes in olive oil in frying pan over medium heat. Crumble the tofu, add to pan & stir. Add salt & turmeric, stir well. Stir in mushrooms and drained olives. Cook about 10 minutes on medium heat, until mushrooms are cooked, stirring occasionally.

Using pre-sliced tomatoes, olives, and mushrooms makes this dish super-quick and easy to prepare. Add a few minutes to prep time if you slice your own.

This is a very satisfying, hearty meal. Have it for breakfast with a slice of whole grain toast and a glass of orange juice, and it will keep you going strong all morning.

Default New Favorite - MEXICRAZY PIZZA

1.25 lbs uncooked 93% lean ground turkey
34 slices of Hormel Turkey pepperoni, cut into quarters
2 15 oz cans tomatoe sauce
1 7 oz can mushrooms
2 11 oz cans Green Giant Mexicorn
2 7.5 oz cans buttermilk biscuits
1 c. part skim mozzerella cheese
1 yellow onion, chopped
1 garlic clove, chopped

makes 8 servings, 7 points per serving
per serving: 360 calories, 18.5 g fat, 4.5 g fiber

preheat oven to 350

brown turkey in a large frying pan. add garlic and onion and vegetables and heat for 5 minutes... add tomatoe sauce and pepperoni

Cut buttermilk biscuits into quarters and separate. Stir slowly into meat mixture. Pour into 13X9 inch pan. Bake for 20 minutes.
sprinkle cheese on top and bake for another 10-15 minutes
enjoy!

BTW, I KNOW the cals and points on this are right, not so sure about the ones on the regular crazy pizza.
