I hope no one mines me chatting in here. I dont really have a designated place to chat. But since this part of the forum is so active, I thought I would start chatting here.
Anywho, I was wondering if anyone knew some recipes for some peanut butter cups. I've been craving some reeses for the longest. But there has to be a more healthier way of making those.
Funny you should ask. My dd is allergic to dairy and wheat so I try and find special treats to make her. In doing so, I stumbled upon this lower cal version of the PB cup (lower cal because of its size). I took a plain rice cake and spread 1 t. peanut butter on it. I then put 1 piece of chocolate on top (I used the dairy free stuff from the health food store, but you could use a dove single instead). Then I put in under the broiler until the chocolate was melted. Then I let it cool until the chocolate was solid again. I was stunned at how good this thing was. You'll definitely need to work it into your calories -- but YUM!
Of course, another thought is just to have a small peanut butter cup and include it as a part of your day. A small one won't break your weight bank.
I saw this posted once and kept it. I have not made it yet, but it sure sounds pretty darn good.
Homemade Peanut Butter Cups: makes 12, 2 pts each
Ingredients:
--1 tub FF cool whip
--1/4 cup RF Peanut butter (Jiff, Skippy)
--Hershey's Choc. Syrup (i think they make this in a low fat version, no?)
Stuff you'll need that's not edible
--Med muffin pan
--Aluminum muffin cups
Preparation:
--put 1/2 of the tub of Cool Whip in a bowl, and mix in 1/4 cup of the peanut butter
--fold in rest of cool whip
--pour into muffin pan
--top each with 1 tsp Hershey's Choc. Syrup
--cover with saran wrap, foil (whatever)
--FREEEEZE and eat
