Miso is a fermented soybean paste. it is a staple of Japanese cuisine. Many Japanese eat miso soup daily. It's low in calories and high in protein (85 calories per cup, with 6 grams of protein). It's like super-boullion. *grins* It's really easy to make, too:

You make a broth with miso and water, with maybe some kombu (seaweed) and ginger for flavoring. When i make it i also add a little garlic, but miso is fairly delicate tasting and can be easily overpowered by other flavors. Then you add a few small chunks of tofu and some sliced scallions. It's a salty, protein-rich broth.

A recipe using dashi stock (seaweed stock)

A recipe that doesn't use seaweed (more like how I make mine at home)

Most miso soup you get from restaurants is made from a light miso. I tend to buy darker miso when I go to the Oriental market. It looks like.. um.. *thinks*... chocolate cake batter. But it tastes more like a very salty Vegemite, if you are familiar with that. I keep it in a container in the back of my fridge. It lasts forever, practically. My husband almost threw it out once, thinking it was some forgotten food that had Gone Home to Jesus, but I soon set him straight!

Hmm. I have eaten a lot of soybeans in my day. Roasted soybeans are yummy. I have even eaten them by the handful right out of the field. I don't know about "fermented soybean paste" though. You guys are brave.

*chuckles* It's very tasty. Try it in soup at a Japanese restaurant and see if you like it.

The weirdest soy food I ever tried, though, is tempeh. It's.. um.. *tries to describe*... soy beans cooked, kinda mashed together, pressed into a cake, then fermented. The fermentation makes it stick together. It's not like tofu, which is made from fermented soy milk. Tofu is more like cheese. Tempeh is from the bean itself, so it has higher protein and fiber than tofu. (In fact, you can make soy milk, then take the leftover soy solids to make tempeh, IIRC). It makes a dry, bumpy loaf... the texture looks like rice cakes, but it's much firmer and meatier. It's a great meat substitute. Very yummy fried, or marinated and baked and used in sandwiches.

Hehe Number of the Feast!! Mmmmm Sushi... miso... I've never tried the edamame beans, what are they like? I may have to grab some tonight - we're going out of town for a couple of nights, and the mountain town has my favorite sushi bar out there.

I have collections agency bothering me for a $66.60 "late" fee. I paid a friggen loan agency 30 MINUTES late. Litterally, they wanted the $1,800 cash payment by 10 AM SHARP... My bank (across the freaking street) opened at 10am and even though I was there 20 minutes prior to opening... I still didn't get across the street to pay until 10:30. And the stupid loan company charged me an extra $60 bucks! The buggers.

I am trying to fight it.
